I just don’t get it.
As a “shipper”,I can try to explain ( but it will be very lame).
I don’t “ship them” like I ship other pairs, in other fandoms. I see their love as a non-romantic thing. It’s love but they’re not in love properly speaking. I think their mutual admiration is stronger than any other duo in the series, and it shows. Davos’s chapters are always focused on how amazing and just Stannis is. I can’t ignore that, but as you said, it would be very OOC for any of them to act on it. Their “love” is purely platonic, but it’s clearly there.
All this rambling to explain that Davos/Stannis are westebros. With really intense respect and admiration. And that I ship without really shipping them if that makes any sense.
